Mike Zietek left college in 1998 and ever since has worked in some of London's finest Hotels, Patisserie shops, and Restaurants, as well as demonstrating at International exhibitions and competing at international level. For several years he was involved in the training of the next generation of chefs - teaching and coaching students - before his interest in food science led to taking up his current role in confectionery design.
Mike has had the pleasure of training under and working with some of the industry's most respected and knowledgeable chefs (including amongst others Alan Whatley, Claire Clark, and Ernst Bachmann) in all areas of pâtisserie and enjoys maintaining his skills with extra work where necessary. His work for the UK Association of Pastry Chefs keeps him very much up to date with what is going on in the industry.
