Literally translated from the french for "crunchy in the mouth", it is the traditional french wedding cake. Crispy profiteroles filled with a liquer créme pâtisserie and dipped in to caramel, stacked into a perfect cone. These form the perfect dessert for your reception and are simply served requiring no accompaniment.
Because each is hand made - stacked freehand, your own design can be as personalised as you like. Below you'll see that it is quite possible to deviate from the standard cone, likewise crunchy almond nougatine is the traditional decoration, sculpted into scrolls and decorative shapes. The croqu is nearly always finished with pulled sugar flowers but if you prefer, fresh flowers and even frosted fruits can be used. Prices start at £3 per portion (3 profiteroles per person), minimum price £50.
